Spanish Noodle Bake Recipe
My neighbor made this dish the other day....It smelled and tasted heavenly....She used bow tie pasta instead of the noodles and it did just fine....

Ingredients
  • 1 large chicken or breast halves, boiled and deboned
  • 8 oz package wide noodles, cooked in chicken broth until tender
  • 1 stick butter
  • 1 cup chopped celery
  • 1 cup chopped green onion, (all of green onions)
  • 1 cup chopped mushrooms
  • 1 cup chopped bell pepper
  • 1/2 pound velveeta cheese, cubed
  • 1 can cream of mushroom soup
  • 1 can rotel tomatoes, diced
  • 1/2 cup chopped pimento olives

Directions
  1. Cook and debone chicken.
  2. Cook noodles or pasta in chicken broth, saving one cup.
  3. In butter saute the veggies until tender.
  4. Add to the sauted veggies the cheese, soup, rotel and pimentoes.
  5. Drain noodles of all but 1 cup of broth.
  6. Mix all together and pour into large baking dish.
  7. Cover and bake for 35 or 40 minutes or until bubbly at 350 degrees.
  8. This makes a very large dish.
