This is good as a great side dish with roasted salmon, roast chicken or even a delicious baked ham. For a filling and vegan one-pot meal, stir in a 19oz can of chickpeas and serve it over steamed spinach or kale!

Ingredients
  • 1 tbsp water
  • 1/2 large yellow onion, diced
  • 1 cup vegetable broth
  • 1/2 cup white wine
  • 1 cup brown basmati rice
  • 1/2 cup orange juice
  • 1/2 tbsp orange zest
  • 1/2 tsp black pepper
  • 1/3 cup Crasins

Directions
  1. Heat a large, nonstick pot over medium-high heat.
  2. Add the water and onion amd cook 6-7 minutes.
  3. Add remaining ingredients except pepper and Craisins. Bring to a boil.
  4. Reduce heat to a simmer, cover and cook 40 minutes.
  5. Stir in pepper and Craisins, recover and cook 5 minutes longer.
  6. Remove from heat and let stand 5 minutes before fluffing and serving.
