Peek A Boo Fig Coffeecake Recipe

Ingredients
  • 1/2 cup shortening
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla
  • 1 egg beaten
  • 1-1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1-1/2 teaspoons baking powder
  • 1/2 cup milk
  • Filling:
  • 1/2 cup dried figs chopped fine
  • 1/4 cup chopped walnuts
  • 1/2 cup brown sugar
  • 1/4 cup melted butter
  • 1 tablespoon cinnamon

Directions
  1. Cream shortening then add sugar and vanilla and cream thoroughly.
  2. Add beaten egg and mix thoroughly.
  3. Sift dry ingredients and add alternately with milk.
  4. Spread half the batter in a greased square cake pan then cover with fig filling.
  5. Add remaining batter than bake at 350 for 45 minutes.
  6. For the filling rinse figs with hot water then chop fine.
  7. Blend with remaining filling ingredients and spread over bottom half of batter.

I just discovered that a neighbor has a fig tree... figs everywhere and he's not doing anything with them! this looks sooo good, may have to sneak over in the evening and pull them off the tree LOL
