Peek A Boo Fig Coffeecake

- 1/2 cup shortening shopping list
- 1/2 cup granulated sugar shopping list
- 1/2 teaspoon vanilla shopping list
- 1 egg beaten shopping list
- 1-1/2 cups all purpose flour shopping list
- 1/2 teaspoon salt shopping list
- 1-1/2 teaspoons baking powder shopping list
- 1/2 cup milk shopping list
- Filling: shopping list
- 1/2 cup dried figs chopped fine shopping list
- 1/4 cup chopped walnuts shopping list
- 1/2 cup brown sugar shopping list
- 1/4 cup melted butter shopping list
- 1 tablespoon cinnamon shopping list
How to make it
- Cream shortening then add sugar and vanilla and cream thoroughly.
- Add beaten egg and mix thoroughly.
- Sift dry ingredients and add alternately with milk.
- Spread half the batter in a greased square cake pan then cover with fig filling.
- Add remaining batter than bake at 350 for 45 minutes.
- For the filling rinse figs with hot water then chop fine.
- Blend with remaining filling ingredients and spread over bottom half of batter.
