Wild Rice With Pine Nuts Recipe
A great recipe for wild rice! It's an easy and elegant side dish. It's also great as a leftover but that really never happens...

Ingredients
  • 1 1/3 cup wild rice (washed)
  • 1 1/2 cup water
  • 2 c beef broth
  • 3/4 cup dried currants
  • fresh black pepper
  • 1 TBS butter
  • 1 cup of finely chopped onion
  • 1/2 cup pine nuts

Directions
  1. Combine beef broth and water into a large saucepan and bring to a boil. Add rice, currants, and pepper. Cover and simmer on low until moisture is absorbed (about 65-70 min). Mean while, toast the pine nuts in a skillett. Wipe out the skillet, melt the butter and saute the onions until translucent. When the rice is done combine all ingredients and serve.

When the cooler weather returns and I get into roasting chicken and eating meat again I definitely will make this one. I love your inclusion of currants - nice texture and touch of sweetness.
