How to make it

  • Combine beef broth and water into a large saucepan and bring to a boil. Add rice, currants, and pepper. Cover and simmer on low until moisture is absorbed (about 65-70 min). Mean while, toast the pine nuts in a skillett. Wipe out the skillet, melt the butter and saute the onions until translucent. When the rice is done combine all ingredients and serve.

    Wild rice? That sounds more like a northern recipe from my "neck of the woods". Hope to try it soon.

    When the cooler weather returns and I get into roasting chicken and eating meat again I definitely will make this one. I love your inclusion of currants - nice texture and touch of sweetness.
