How to make it

  • Cook potatoes and drain, reserving 1 cup of the water.
  • In large pot, saute onions,mushrooms and celery in butter until tender
  • Stir in potatoes, soup, and water from potatoes.
  • Bring to a boil and lower to med. low heat.
  • Slowly stir in half and half and lower heat to low and cook for 4 to 5 minutes.
  • Stir in cheese and spices and continue to simmer for another 5 minutes.
  • Serve over hot cooked rice.
