Creamed Potatoes Over Rice

- 8 potatoes, (russet works well)peeled and diced,cooked(reserve 1 cup of the water) shopping list
- 2 cans cream of mushrooms soup shopping list
- 1 stick butter shopping list
- 8oz. sliced mushrooms shopping list
- 2 1/3 cups half and half or milk shopping list
- 2 to 3 stalks celery, chopped shopping list
- 1 onion, chopped shopping list
- salt and pepper to taste shopping list
- 1 teaspoon garlic salt shopping list
- dash dried parsley shopping list
- 8 oz. shredded medium cheddar cheese shopping list
- cooked rice shopping list
How to make it
- Cook potatoes and drain, reserving 1 cup of the water.
- In large pot, saute onions,mushrooms and celery in butter until tender
- Stir in potatoes, soup, and water from potatoes.
- Bring to a boil and lower to med. low heat.
- Slowly stir in half and half and lower heat to low and cook for 4 to 5 minutes.
- Stir in cheese and spices and continue to simmer for another 5 minutes.
- Serve over hot cooked rice.
