Creamed Potatoes Over Rice Recipe
This is a dish my mom used to make when money was tight. This is so smooth and creamy! I know you will enjoy this just as much as my family has for years!

Ingredients
  • 8 potatoes, (russet works well)peeled and diced,cooked(reserve 1 cup of the water)
  • 2 cans cream of mushrooms soup
  • 1 stick butter
  • 8oz. sliced mushrooms
  • 2 1/3 cups half and half or milk
  • 2 to 3 stalks celery, chopped
  • 1 onion, chopped
  • salt and pepper to taste
  • 1 teaspoon garlic salt
  • dash dried parsley
  • 8 oz. shredded medium cheddar cheese
  • Cooked rice

Directions
  1. Cook potatoes and drain, reserving 1 cup of the water.
  2. In large pot, saute onions,mushrooms and celery in butter until tender
  3. Stir in potatoes, soup, and water from potatoes.
  4. Bring to a boil and lower to med. low heat.
  5. Slowly stir in half and half and lower heat to low and cook for 4 to 5 minutes.
  6. Stir in cheese and spices and continue to simmer for another 5 minutes.
  7. Serve over hot cooked rice.
