How to make it

  • Melt butter in large saucepan over med hi heat.
  • Add onions, carrots and celery and cook for 10 minutes until carrots become slightly tender.
  • Add stock, potatoes, salt and pepper.
  • Bring to a boil and allow to simmer 15-20 mins until vegies are tender.
  • Add milk and parsley then heat to boiling.
  • In a seperate bowl mix water and cornstarch.
  • When dissolved add to hot soup.
  • This is also good with oyster crackers =P
