This is Great recipe from a Rachael Ray recipe that I just had to share with ya'll. Really easy to put together quick on a week night for a great family meal, and ain't that what it's all about? It has earned a spot on the Dooley menu!

Ingredients
  • 1 16 oz. Jar Fire roasted red peppers (it's just jarred roasted Red bell peppers)
  • 12 oz.(3 cups) Mexican Shredded Cheeese
  • 1 1/4 lb Ground turkey (or 1 1/2 lb grnd. beef)
  • 1 16 oz. jar Chunky Salsa
  • 1 cup Bread Crumbs
  • 2 Eggs beaten
  • 1/3 cup Cilantro (recipe called for Parsley, but that's Cilantro in our house)
  • 1 teaspoon salt
  • 1 teaspoon Pepper

Directions
  1. Pre-heat the oven to 375
  2. Grease a 10" pie plate with Olive Oil
  3. Line the pie plate with the roasted red peppers (like a crust)
  4. Sprinkle 1 cup cheese over peppers
  5. Mix together the Turkey, 1 cup cheese, 1 cup bread crumbs, 3/4 cup salsa, eggs, Cilantro, salt/pepper until combined
  6. Press the meat mixture into the the pepper and cheesed lined plate
  7. Spread the remaining salsa over the top
  8. Bake for 35-40 min.
  9. Sprinkle the remaining 1 cup cheese over top and bake for another 10-15 minutes
  10. Let reast for 15 min. and serve
