Tex-Mex Meatloaf Cheddar Pie

- 1 16 oz. Jar Fire roasted red peppers (it's just jarred roasted red bell peppers) shopping list
- 12 oz.(3 cups) Mexican Shredded Cheeese shopping list
- 1 1/4 lb ground turkey (or 1 1/2 lb grnd. beef) shopping list
- 1 16 oz. jar chunky salsa shopping list
- 1 cup bread Crumbs shopping list
- 2 eggs beaten shopping list
- 1/3 cup cilantro (recipe called for parsley, but that's cilantro in our house) shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon Pepper shopping list
How to make it
- Pre-heat the oven to 375
- Grease a 10" pie plate with Olive Oil
- Line the pie plate with the roasted red peppers (like a crust)
- Sprinkle 1 cup cheese over peppers
- Mix together the Turkey, 1 cup cheese, 1 cup bread crumbs, 3/4 cup salsa, eggs, Cilantro, salt/pepper until combined
- Press the meat mixture into the the pepper and cheesed lined plate
- Spread the remaining salsa over the top
- Bake for 35-40 min.
- Sprinkle the remaining 1 cup cheese over top and bake for another 10-15 minutes
- Let reast for 15 min. and serve
