This easy and delicious recipe for Chicken Parmesean is from my Mom. Simple and so good! Mom says "always cook with extra sauce" I agree. Serve with garlic bread and salad.

Ingredients
  • 4 skinned chicken breast fillets
  • 1 egg, lightly beaten
  • ½ cup seasoned breadcrumbs (mixed herbs or Italian herbs)
  • 1 tablespoons butter or margarine
  • 1 tablespoon olive oil
  • 1 tbs garlic powder
  • 3 Cups of your favorite pasta sauce (I use Prego)
  • 1 Cup shredded mozzarella cheese
  • 1/2 Cup shredded parmesean cheese (mix with breadcrumbs)
  • Additional parmesean cheese for garnish
  • ¼ cup chopped fresh parsley
  • 16 Oz fettuccuine, cooked.

Directions
  1. Place chicken fillets between two sheets of plastic wrap; flatten to ¼ inch thickness, using a meat mallet or rolling pin. Dip chicken in egg, and dip in breadcrumbs and parmesean mixture.
  2. Melt butter in large skillet or frypan,add olive oil and garlic powder, cook chicken over medium-high heat until browned on both sides. Spoon pasta/tomato sauce over chicken; gently bring to a boil. Cover, reduce heat, and simmer for approximately 10 minutes.
  3. Sprinkle with cheese, cover and simmer five additional minutes or until cheese melt.
  4. Garnish with additional shredded parmesean cheese and parsley.
