i just made this and it is YUMMY...
of course i cannot leave well enough alone...
so i added-
the diced red pepper and diced celery (same ammount as carrot) and a smashed clove of garlic...
at the very last minute i added a handful of chickory torn into small pieces...i thought it needed something green!....lol...
it came out great- but i needed to leave the pot covered for about 10 minutes after turning off the heat to let the rest of the liquid absorb and the lentils soften...
great recipe!
