Ingredients

How to make it

  • sift flour, baking powder and salt
  • make a well in centre
  • beat the eggs, milk and oil
  • gradually add to flour, beating until smooth
  • (thick cream consistency)
  • stir in bacon, bananas and corn
  • heat oil and fry spoonfuls of mix three to four min. oneither side until golden.
  • drain on absorbent paper towels - keep warm
  • Make a meal by adding some fryed chicken and a green salad

    Very interesting recipe. Not a combo I would have cooked up on my own. Kind of like something you would find in that mystery basket on "Chopped". Sounds very good and would make a great breakfast fritter for a leisurely Sunday morning. Thanks.

    You're right. These are probably better as a breakfast snack. I made them with some fried chicken and just couldn't get used to the sweet punch the fritters give.

    I'm thinking they would be just great as a sub for pancakes. Maybe a little chutney to compliment them.
