Roasted Shallots and Tomatoes

- 18 small shallots, peeled and halved shopping list
- 1/4 c. balsamic vinegar shopping list
- 1/4 c. olive oil shopping list
- 1-12 oz pkg. grape or cherry tomatoes shopping list
- 13/ c drained capers, plus 1 T brine from jar shopping list
- salt & pepper shopping list
How to make it
- Preheat oven 450. Combine shallots, balsamic and olive oil in medium roasting pan, toss to coat. Sprinkle with salt and pepper. Roast about 15 minutes until shallots are browned and tender. Add tomatoes and roast until soft and browned, another 15 minutes. Remove from oven. Add capers and reserved brine and stir to blend.
