How to make it

  • Preheat oven 450. Combine shallots, balsamic and olive oil in medium roasting pan, toss to coat. Sprinkle with salt and pepper. Roast about 15 minutes until shallots are browned and tender. Add tomatoes and roast until soft and browned, another 15 minutes. Remove from oven. Add capers and reserved brine and stir to blend.

    This will be so great along side a grilled steak or chicken.. And I get to eat all of them.. As my husband does not like cooked tomatoes.. his loss! I'll let you know how I liked them next week. Going to do them on the grill.
