Couscous With Fruit

- 1- 7 to 9 oz. instant couscous shopping list
- 1/2 c. raisins shopping list

- 2 Tbsp. olive oil shopping list
- 1 tsp. minced garlic shopping list

- 1/4 tsp. cayenne shopping list
- 1 tsp. paprika shopping list
- 1 lg. zucchini, cubed shopping list
- - - - - - - - - - - - - - - - - - - shopping list
- 1 - 15 oz. can chick peas (garbanzos) shopping list
- , drained and rinsed shopping list
- 1c. green peas, fresh or frozen shopping list
- _______________________ shopping list
- salt and pepper, fresh ground shopping list
- _______________________ shopping list
- 1 c. dates, chopped and pitted shopping list
- 1 c. cashews shopping list
- 1/2 tsp. minced parsley shopping list
- mint leaves for garnish, opt. shopping list
- 1 c. green 3peas, fresh or frozen shopping list
How to make it
- In a large saucepan, cook couscous and raisins according to package directions (no added fat).

- In a skillet, heat 2 Tbsp. olive oil over medium heat, when hot add garlic.
- Saute until golden.

- Add to skillet, cayenne, paprika and zucchini.
- Saute 7 - 10 minutes.

- Stir in chickpeas and green peas
- ______________________
- Season to taste with salt and pepper.
- ______________________
- Stir vegetable mixture from skillet into cooked couscous.
- Spoon into a large serving dish, making a well in the center.
- Fill well with dates and cashews, and garnish with parsley and mint leaves.
- Serve hot or at room temperature.
