How to make it

  • In a mixing bowl combine flour, sugar, soda, cinnamon and 1/2 tsp salt.
  • In another bowl combine carrot, apple, coconut, dates, and pecans. Stir in beaten eggs, oil, and vanilla.
  • Add to dry ingredients, stirring till moistened.
  • Grease or line muffin pans with paper-bake cups.
  • Spoon batter into prepared muffins pans.
  • Bake in 375 degrees oven about 18 to 20 minutes.
  • Remove from pans; cool on wire racks.
  • 207 calories per muffin, 2 g protein, 23 g carbos, 12 g fat, 30 mg. chol, 141 mg soaium, USRDA: 16% VITAMIN A
