Copycat Hard Rock Cafe Shrimp Fajitas

- 1 lb. medium shrimp, shelled and deveined shopping list
- 1 cup chopped cilantro shopping list
- 2 cloves minced garlic shopping list
- 1/3 cup lime juice shopping list
- 1/2 tsp. salt shopping list
- 4 9" flour tortillas shopping list
- 1 Tbsp. olive oil shopping list
- 2 large bell peppers, thinly sliced shopping list
- 1 large onion, thinly sliced shopping list
- 1/2 cup sour cream shopping list
- 1/2 cup guacamole shopping list
- 1/2 cup pico de gallo sauce shopping list
How to make it
- Stir together shrimp, cilantro, garlic, lime juice and salt. Let stand at room temperature for 20 minutes.
- Meanwhile, wrap tortillas in foil and place in a 350* oven until hot (about 15 minutes).
- Heat oil in a wide nonstick frying pan over medium-high heat.
- Add peppers and onions. Cook, stirring occasionally, until limp (about 10 minutes). Remove vegetables and keep warm.
- Add shrimp mixture to pan, increase heat to high, and cook stirring often, until shrimp is opaque in center; cut to test (about 3 minutes).
- Return vegetables to pan, stirring to mix with shrimp.
- Spoon shrimp mixtures onto tortillas, top with sour cream, guacamole, and pico de gallo sauce, and roll up
