The pineapple adds a nice sweetness and acidity to this salsa. It's great as a dip, but also as a sauce for grilled chicken. If you don't have grilled corn, canned will work, too.

Ingredients
  • 1 cup corn, grilled and cut off the cob
  • 2 tsp. canola oil
  • 1 can black beans, rinsed and drained
  • 1 cup fresh pineapple, chopped
  • 1 cup tomato, seeded and chopped
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup red onion, finely chopped
  • 1/4 cup cilantro roughly chopped
  • 1 orange bell pepper finely chopped
  • 1/2 jalapeno, seeded and finely chopped
  • Juice of 1 lime
  • Salt and Pepper to taste

Directions
  1. Combine all ingredients in a large bowl and stir well to combine flavors. Cover and refrigerate for one hour.
  2. Serve as a salsa for chips or spoon over grilled chicken or fish.
