Gingered Carrots Recipe

Ingredients
  • 2 pounds carrots scraped
  • 2 tablespoons granulated sugar
  • 2 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 cup orange juice
  • 2 tablespoons butter

Directions
  1. Cut carrots diagonally into 1/4" slices.
  2. Cook carrots in boiling water to cover 7 minutes or until tender then drain.
  3. Keep warm in a serving dish.
  4. Combine next 4 ingredients in saucepan then gradually add orange juice stirring well.
  5. Bring to a boil over medium heat stirring constantly.
  6. Boil 1 minute stirring constantly then stir in butter and pour over carrots and toss well.

Nice and I've made a version of this. The carrots are so naturally sweet the sugar isn't really necessary.
