Molasses Crinkle Cookies Recipe

Ingredients

3/4 cup shortening (not butter or margarine)

1 cup fine sugar

1/4 cup dark (but not blackstrap) molasses

1 large egg

2 tsp. baking soda

2 C white flour

1/2 tsp. salt

Generous 1/2 tsp. ground cloves

3/4 tsp. ground ginger

1 tsp. cinnamon

Directions

Melt the shortening in a large bowl in the microwave and cool it to room temperature.

Add the sugar, molasses and egg and beat well.

Sift together the dry ingredients and add, mixing well with a wooden spoon.

Wrap the dough in clear wrap and refrigerate a few hours or overnight.

Roll dough into 1" balls.

Place on lined or greased cookie sheets and bake in a preheated 375° oven 8-10 minutes or until browned but not crisp.

Allow to cool a couple minutes on the sheet before removing to a rack to completely cool.

Store in an airtight container.

Alternatively, for a chewy brownie-type bar, pat the dough evenly into a greased 13x9" pan and bake 20-25 minutes or until browned at the edges but still chewy. These will not keep quite as well but that's never been a problem at my house!
