Molasses Crinkle Cookies Recipe
These cookies disappear most quickly at Christmastime and I must always make at least a double batch. Good anytime with a glass of milk or a Latté. Supposedly they keep well but not at my house!

Ingredients
  • 3/4 cup shortening (not butter or margarine)
  • 1 cup fine sugar
  • 1/4 cup dark (but not blackstrap) molasses
  • 1 large egg
  • 2 tsp. baking soda
  • 2 C white flour
  • 1/2 tsp. salt
  • Generous 1/2 tsp. ground cloves
  • 3/4 tsp. ground ginger
  • 1 tsp. cinnamon

Directions
  1. Melt the shortening in a large bowl in the microwave and cool it to room temperature.
  2. Add the sugar, molasses and egg and beat well.
  3. Sift together the dry ingredients and add, mixing well with a wooden spoon.
  4. Wrap the dough in clear wrap and refrigerate a few hours or overnight.
  5. Roll dough into 1" balls.
  6. Place on lined or greased cookie sheets and bake in a preheated 375° oven 8-10 minutes or until browned but not crisp.
  7. Allow to cool a couple minutes on the sheet before removing to a rack to completely cool.
  8. Store in an airtight container.
  9. Alternatively, for a chewy brownie-type bar, pat the dough evenly into a greased 13x9" pan and bake 20-25 minutes or until browned at the edges but still chewy. These will not keep quite as well but that's never been a problem at my house!

Well, this will be another addition to my holiday baking tray. We love molasses and these sound not only easy but decadent. Great post and a high five.
