Ingredients
  • 1 stick of butter, unsalted (can use salted but once it's clarified you can not tell how much salt is left after removing solids.) 1 stick of butter produces 6 tbls. of clarified butter

Directions
  1. Cut butter into cubes
  2. Slowly heat in small saucepan until butter is all melted and solids have foamed to the top
  3. Remove from heat
  4. Skim foam off top of clear golden liquid
  5. Pour into glass or measuring cup
  6. Let cool
  7. Skim solids from top again
  8. Keep refrigerated

Awesome! You know how I love my crab legs. This is a great recipe to have. Thanx wynne. :)


It'a also better to use in recipes that call for buttering sheets of phyllo dough (like baklava and spanakopita) because they come out flakier and crispier. Great post, wynne.


Great post! It's been years since I have used un-clarified butter. Clarified butter takes scrambled or fried eggs to a whole new level... ;-) Personally, I use a little behing my ears before I go out clubbing... The mediterranean girls love
it...;-)~~


I needed some of this when I got sunburned and looked like a lobster!!


Wynne just made an enormous amount of ghee,like 10 pounds....use it esp for my catering purposes,

Alterations


After doing the above recipe, you can refine it into Ghee by reheating it a 2nd time at a slightly higher temp until the remaining water boils out and any left over solids fall to the bottom. It will turn almost clear.
