Clarified Or Drawn Butter

How to make it
- Cut butter into cubes
- Slowly heat in small saucepan until butter is all melted and solids have foamed to the top
- Remove from heat
- Skim foam off top of clear golden liquid
- Pour into glass or measuring cup
- Let cool
- Skim solids from top again
- Keep refrigerated

It'a also better to use in recipes that call for buttering sheets of phyllo dough (like baklava and spanakopita) because they come out flakier and crispier. Great post, wynne.

Great post! It's been years since I have used un-clarified butter. Clarified butter takes scrambled or fried eggs to a whole new level... ;-) Personally, I use a little behing my ears before I go out clubbing... The mediterranean girls love
