After doing the above recipe, you can refine it into Ghee by reheating it a 2nd time at a slightly higher temp until the remaining water boils out and any left over solids fall to the bottom. It will turn almost clear.

It'a also better to use in recipes that call for buttering sheets of phyllo dough (like baklava and spanakopita) because they come out flakier and crispier. Great post, wynne.
