Ingredients

How to make it

  • Cut butter into cubes
  • Slowly heat in small saucepan until butter is all melted and solids have foamed to the top
  • Remove from heat
  • Skim foam off top of clear golden liquid
  • Pour into glass or measuring cup
  • Let cool
  • Skim solids from top again
  • Keep refrigerated

    Great post! It's been years since I have used un-clarified butter. Clarified butter takes scrambled or fried eggs to a whole new level... ;-) Personally, I use a little behing my ears before I go out clubbing... The mediterranean girls love
    it...;-)~~

    It'a also better to use in recipes that call for buttering sheets of phyllo dough (like baklava and spanakopita) because they come out flakier and crispier. Great post, wynne.
