Banana Oatmeal Cake With Caramel Fudge Frosting

- CAKE: shopping list
- 2 cups all-purpose flour shopping list
- 1 cup rolled oats shopping list
- 1 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp nutmeg shopping list
- 1/2 cup butter, room temperature shopping list
- 1 cup sugar shopping list
- 2 eggs shopping list
- 1tsp vanilla shopping list
- 1 1/2 cups mashed ripe banana shopping list
- 3/4 cup buttermilk shopping list

- caramel FUDGE FROSTING: shopping list
- 1/3 cup butter shopping list
- 1 cup lightly packed brown sugar shopping list
- 1/4 cup milk ( at least 2%) shopping list
- 2 cups sifted icing sugar shopping list
How to make it
- Preheat oven to 350F
- Grease 9x13" cake pan.
- CAKE:
- In medium bowl mix together dry ingredients.
- In large bowl with electric mixer cream together butter and sugar until light and fluffy.
- Add eggs and vanilla, beating well.
- Add dry ingredients alternately with bananas and buttermilk mixing lightly after each addition.
- Pour batter into prepared pan and bake for 35-40 minutes or until toothpick inserted in center comes out clean.
- Cool completely on cake rack.

- FROSTING:
- Melt butter in saucepan.
- Stir in brown sugar and heat to boiling, stirring constantly.
- Boil and stir over low heat for 2 minutes.
- Stir in milk.and heat to boiling again.
- Remove from heat.
- Gradually stir in icing sugar.
- Spread on cooled cake.
