How to make it

  • Preheat oven to 350F
  • Grease 9x13" cake pan.
  • CAKE:
  • In medium bowl mix together dry ingredients.
  • In large bowl with electric mixer cream together butter and sugar until light and fluffy.
  • Add eggs and vanilla, beating well.
  • Add dry ingredients alternately with bananas and buttermilk mixing lightly after each addition.
  • Pour batter into prepared pan and bake for 35-40 minutes or until toothpick inserted in center comes out clean.
  • Cool completely on cake rack.

  • FROSTING:
  • Melt butter in saucepan.
  • Stir in brown sugar and heat to boiling, stirring constantly.
  • Boil and stir over low heat for 2 minutes.
  • Stir in milk.and heat to boiling again.
  • Remove from heat.
  • Gradually stir in icing sugar.
  • Spread on cooled cake.

    I have made this twice already - and every time it was delicious. I added nuts, cinnamon and a little bit of coconut. The caramel icing makes it really good!

    Oh that sounds heavenly - love oatmeal cakes, and this one is a keeper for sure...printed and ready to go next time I'm making a cake. Delish, I'm sure...thank you!
