Ingredients
  • 1/2 cup chopped onion
  • 3 cups zucchini, peeled and shredded
  • 1/3 cup canola oil
  • 1 cup "Jiffy" Mix or Bisquick
  • 1/2 cup grated cheese
  • 4 beaten eggs
  • 1/2 teaspoon Italian seasoning

Directions
  1. Preheat the oven to 350 degrees. Soften onion and zucchini in a bit of water, drain and saute 10 minutes.
  2. Mix them with all the other ingredients and put into buttered casserole dish. Bake at 350 degrees about 25 minutes, to a golden color. This is almost like a quiche.

Sounds great! I found a wheat free biscuit mix and it works out well with "Bisquick" recipes.
