This is a great way to use stale bread, rather than throwing it out or increasing the pigeon population.

Ingredients
  • 6 slices day-old bread
  • 2 tablespoons butter, melted
  • 1/2 cup raisins (Optional)
  • 4 eggs, beaten
  • 2 cups milk
  • 3/4 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Directions
  1. Preheat oven to 350F.
  2. Break bread into small pieces, mix with raisins and pile into a 8 inch square baking pan.
  3. Pour melted butter or margarine over bread.
  4. Mix eggs, milk, sugar, cinnamon, and vanilla In a medium mixing bowl.
  5. Pour over the bread then lightly push down with a fork until bread is covered and soaking up the mixture.
  6. Bake for 45 minutes or until the top springs back when lightly tapped.
  7. **You can substitue glace cherries for the raisins. Just cut cherries in half.
  8. **Recipe is easily doubled.

I just love this basic bread pudding recipe. It is quick and simple to make, and I have all the ingredients for it. Well, High 5, and I'm off to the kitchen to rummage through my pantry. LOL. Have a wonderful day....Cheryl
