Ingredients
  • 2 lbs chicken or pork
  • 2 TBS more or less Vegetable oil
  • 1 Can (about 20 oz) pineapple chunks (drained) Reserve liquid (I use the chunks packed in pineapple juice not the syrup)
  • ½ Cup brown sugar
  • ½ Cup cider vinegar
  • 2 tsp Soy sauce
  • 1-Clove minced Garlic
  • 2 TBS corn starch
  • 2 TBS cold water
  • 1/8 tsp fresh grated ginger
  • 1 Green Pepper cut into ¾ inch pieces
  • ½ - 1 Onion cut into ¾ inch pieces
  • 2 Stalks of celery sliced diagonally
  • ½ Cup carrots cut into match sticks
  • Everything else is optional this is a good recipe to clean out the refrigerator.
  • For that matter if you want to make this vegetarian don’t put in the meet.
  • Breading (optional)
  • ½ Cup all purpose flour
  • Vegetable oil
  • ¼ Cup corn starch
  • ½ Cup cold water
  • 1 Egg
  • 1 tsp salt

Directions
  1. Breading (Optional)
  2. Heat oil (1 inch) to 360 degrees
  3. Beat flour, corn starch, water, egg and salt with a hand beater until smooth
  4. Add meat to batter stir until well coated
  5. Add meat to hot oil 1 at a time
  6. Fry about 20 pieces at a time until golden brown
  7. Turning 2-3 times (about 5 minutes)
  8. Drain on paper towel and keep worm
  9. Sauce
  10. Add enough water to the reserved pineapple juice to make one cup.
  11. Heat juice, water brown sugar, vinegar, soy sauce and garlic in a medium sauce pan until boiling.
  12. Mix corn starch and water to a thin paste add to hot sweet and sour sauce.
  13. Stir with a whisk until thickened remove from heat.
  14. Stir Fry
  15. (Note) if you plan on using the breading skip this part
  16. Add oil to a large frying pan stir fry meet and ginger over medium high heat remove to a plate
  17. Using the broth left in the frying pan stir fry the vegetables with the exception of the pineapple.
  18. 1-2 minutes before the vegetables are done add the pineapple
  19. Add meet to the vegetables and cook to mix
  20. Add ¼ - ½ cup sweet and sour sauce to meat and vegetables mix to coat.
  21. Serve with rice and remaining sauce on the side.
