Delicious Easy Mexican Rice

- 2 tablespoons butter shopping list
- 1-1/2 cups long grain rice shopping list
- 1/2 cup chopped onion shopping list
- 1/2 cup chopped green bell pepper shopping list
- 1 clove minced garlic shopping list
- 2 cups water shopping list
- 1 can rotel (14.5 ounce) shopping list
- 2 teaspoons chili powder shopping list
- 1/2 teaspoon cumin shopping list
- 1/4 teaspoon salt shopping list
- 1 cup shredded mild cheddar cheese, (can leave out) shopping list
How to make it
- In a saucepan, melt butter over medium heat
- Add the rice, onion, pepper, garlic
- Cook until rice is slightly browned and onions/peppers are tender
- Stir in the water, Rotel, chili powder, cumin, salt
- Bring all to boil, and reduce heat
- Simmer, covered 15-17 minutes OR until rice is tender
- Last, stir in the cheese
- Spoon into casserole or bowl
