Ingredients

How to make it

  • In a saucepan, melt butter over medium heat
  • Add the rice, onion, pepper, garlic
  • Cook until rice is slightly browned and onions/peppers are tender
  • Stir in the water, Rotel, chili powder, cumin, salt
  • Bring all to boil, and reduce heat
  • Simmer, covered 15-17 minutes OR until rice is tender
  • Last, stir in the cheese
  • Spoon into casserole or bowl
