Easy. Great with pork, brisket, chicken. Great fajita topping. Delicious.

Ingredients
  • 2 tablespoons butter
  • 1-1/2 cups long grain rice
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 clove minced garlic
  • 2 cups water
  • 1 can Rotel (14.5 ounce)
  • 2 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1 cup shredded mild Cheddar cheese, (can leave out)

Directions
  1. In a saucepan, melt butter over medium heat
  2. Add the rice, onion, pepper, garlic
  3. Cook until rice is slightly browned and onions/peppers are tender
  4. Stir in the water, Rotel, chili powder, cumin, salt
  5. Bring all to boil, and reduce heat
  6. Simmer, covered 15-17 minutes OR until rice is tender
  7. Last, stir in the cheese
  8. Spoon into casserole or bowl
