Cold Ginger Soy Sesame Noodles Recipe
Super easy recipe for cold asian noodles. Add veggies as you like.

Ingredients
  • 2 tsp Peanut Butter
  • 1 Tbsp Honey
  • 2 Tbsp Tamari
  • 1 tsp Sesame Oil
  • 1 tsp ground ginger or 1 inch fresh (peeled & grated)
  • ~1/2 lb soba or other noodles
  • 1 Tbsp sesame seeds
  • *I also added grated carrots, soy beans and tofu when I made this.

Directions
  1. Boil noodles according to package
  2. Rinse under cold water until noodles are chilled
  3. Heat peanut butter in microwave (~20 sec) until melted.
  4. Whisk in honey & tamari.
  5. Now whisk in sesame oil and ginger
  6. Toss with noodles
  7. Toast sesame seeds and add to dish
  8. Add any other veggies on hand.

Melissa made this recipe for a dinner and it was delicious! The soba noodles make the dish much more interesting and tasty than rice noodles. I am definitely going to make this recipe.
