Ingredients
  • 2 Pounds Limes,Washed
  • 8 Fresh Red Chilies,Chopped
  • 4 Cloves Garlic,Chopped
  • 2 Tablespoons Ground Coriander
  • 1 Tablespoon Ground Cumin
  • 2 teaspoons Ground Cardamon
  • 2 teaspoons Black Mustard Seeds
  • 1 teaspoons Freshly Ground Black Pepper
  • 1 teaspoon Salt
  • 1 teaspoon Turmeric
  • 1-1/2 Cups White Wine Vinegar
  • 1/2 Cup Vegetable Oil

Directions
  1. Cut each lime into 6 wedges,then halve the wedges and place the pieces in a saucepan with other ingredients.
  2. Bring to a boil,then reduce the heat and simmer until the fruit is tender and the pickle thick, about 50 minutes.
  3. Ladle into warm,clean jars, leaving 1/4 " headspace.
  4. Process 15 minutes in a boiling water bath.
  5. Well be ready to eat after 2 weeks
  6. Makes 4 half-pints
