A very simple lettuce salad dressing when you want something with less oil and calories or just looking for a way to change up a simple lettuce salad. Try it on cucumbers, too!

Ingredients
- 6oz Spicy tomato vegetable juice
- 2T red wine or balsamic vinegar
- 2T dressing quality olive oil
- Juice from 1 lemon
- tomato paste to thicken to desired consistency(a couple T)
- fresh parsley(a couple T)
Directions
- Whisk together all dressing ingredients except paste and parsley.
- Add paste as needed to thicken.
- Stir in parsley.
- This can be served immediately, chilled, or even warmed slightly.

This was great. The only thing is that my grocery store didn't have the "spicy" vegie juice so I got regular and had to spice it up myself. I can't wait to make it with the right stuff though b/c I think it would be even better. This went great with out steak salad! Thanks again Keni!
