Skillet Beef And Squash-ci

- Marinade: shopping list
- 1/4 cup olive oil shopping list
- 2T packed brown sugar shopping list
- 1/4 cup balsamic or red wine vinegar shopping list
- 4 cloves garlic shopping list
- herbs of choice--ie thyme, rosemary, oregano, basil shopping list
- salt and pepper shopping list
- beef and Veggies: shopping list
- 1 1/2lb beef round steak(cut into strips) shopping list
- 2T olive oil(or use 1/2 oil and 1/2 butter--this is what I do) shopping list
- 2 cups of sliced zucchini or squash, or combination(2 cups total) shopping list
- 1 large onion, sliced into rings shopping list
How to make it
- Combine marinade ingredients in large bowl and add beef. Toss to coat and set aside.
- In skillet, cook veggies in butter/olive oil over medium heat until just tender(3 or 4 minutes).
- Remove from skillet and replace with beef, saving some of the marinade.
- Cook, stirring frequently, over medium high heat until meat is browned.(maybe 5 minutes)
- Add veggies and marinade to beef in skillet and cook until heated.
- Serve over hot buttered egg noodles and add fresh parsley, if desired.
