Skillet Beef And Squash-ci Recipe

A simple way to use up some of the overabundance of summer squash! Try it served over a bed of buttered egg noodles.

Ingredients
  • Marinade:
  • 1/4 cup olive oil
  • 2T packed brown sugar
  • 1/4 cup balsamic or red wine vinegar
  • 4 cloves garlic
  • herbs of choice--ie thyme, rosemary, oregano, basil
  • salt and pepper
  • Beef and Veggies:
  • 1 1/2lb beef round steak(cut into strips)
  • 2T olive oil(or use 1/2 oil and 1/2 butter--this is what I do)
  • 2 cups of sliced zucchini or squash, or combination(2 cups total)
  • 1 large onion, sliced into rings

Directions
  1. Combine marinade ingredients in large bowl and add beef. Toss to coat and set aside.
  2. In skillet, cook veggies in butter/olive oil over medium heat until just tender(3 or 4 minutes).
  3. Remove from skillet and replace with beef, saving some of the marinade.
  4. Cook, stirring frequently, over medium high heat until meat is browned.(maybe 5 minutes)
  5. Add veggies and marinade to beef in skillet and cook until heated.
  6. Serve over hot buttered egg noodles and add fresh parsley, if desired.
