Boiled Sausage And Vegetable Dinner Recipe

Ingredients
  • 2 1/2 pounds smoked sausage
  • 1 2 pound ham hock
  • 4 large potatoes, cleaned and cut into large chunks
  • 3 celery stalks, leaves removed and cut into large chunks
  • 6 turnips, peeled and cut into large chunks
  • 6 carrots, cleaned and cut into large chunks
  • 2 onions cut into large chunks
  • 1 large head cabbage, quartered and core removed
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon ground black pepper, or to taste
  • 1 tablespoon of Creole seasoning mix
  • 1 quart water

Directions
  1. Bring a large pot of water to a boil.
  2. Add sausage and ham hocks, and cook for 10 to 15 minutes (to reduce the amount of fat).
  3. Drain, and set aside.
  4. In the large pot, arrange potatoes, celery, turnips, carrots and onions.
  5. Quarter cabbage and add to pot.
  6. Season with salt and pepper.
  7. Place sausage and ham hocks on top.
  8. Pour in water.
  9. Seal pot with aluminum foil and then cover with a tight fitting lid.
  10. Bring to a boil, reduce heat, and simmer for 30 minutes, or until vegetables are tender.
  11. Enjoy
  12. Note: Any combination of fresh hardy vegetables can be used.
