  • 4 EIGHT INCH FLOUR TORTILLAS
  • 1 TWO POUND FLANK STEAK MARINATED GRILLED AND SHREDDED: RECIPE FOLLOWS
  • 1/2 CUP VEGGIE OIL
  • 2 CUPS FRESH PICO DE GALLO: RECIPE FOLLOWS
  • 1 LARGE CAN OF REFRIED BEANS
  • 2 CANS OF CHOPPED GREEN CHILES
  • 1 HEAD OF LETTUCE SHREDDED
  • SOUR CREAM
  • SHREDDED CHEESE OF CHOICE
  • FLANK STEAK MARINADE=4 GARLIC CLOVES MINCED, 1 JALAPENO MINCED, 1 HANDFUL OF FRESH CILANTRO CHOPPED, KOSHER SALT AND CRACKED PEPPER, 2 LIMES JUICED, 1 ORANGE JUICED, 2 TBPS WHITE VINEGAR AND A 1/2 CUP OLIVE OIL...MASH ALL INGREDIENTS TOGETHER AND POUR OVER STEAK IN A GALLON SIZED ZIP LOCK BAG AND LET JIVE IN THE FRIDGE FOR ABOUT 8 HOURS. THEN TAKE THAT PUPPY OUT BACK AND GRILL IT OVER MED HIGH HEAT FOR ABOUT 10 MINUTES PER SIDE OR UNTIL MED WELL. LET IT SIT FOR 10 AND THEN THIN SLICE ACROSS GRAIN.
  • PICO DE GALLO=2 VINE RIPE TOMATOES CHOPPED, 2 TOMATILLOS CHOPPED, 1/2 MED RED ONION CHOPPED, 2 SCALLIONS SLICED, 1 SERRANO CHILE MINCED, HANDFULL OF FRESH CILANTRO CHOPPED, 3 GARLIC CLOVES MINCED, 1 LIME JUICED, 1/4 CUP OLIVE OIL AND A TSP KOSHER SALT. MIX ALL TOGETHER LET SIT 15 TO LET IT GET ITS GROOVE ON!!

Directions
  1. WHEN YOU HAVE THE STEAK AND PICO DE GALLO READY YOU CAN BEGIN...SHRED THAT LETTUCE..WARM THOSE REFRIED BEANS IN A SAUCE PAN.
  2. WHILE THEY WARM...POUR 1/2 CUP OF VEGGIE OIL IN A SKILLET, HEAT UP TIL JUST ABOUT SMOKIN' , GRAB A TORTILLA AND SLIDE IT IN THE OIL ( IT IS GOING TO PUFF UP SO YOU WANT TO PRESS IT DOWN FLAT ) DO THIS ON BOTH SIDES UNTIL THE SHELL IS DEEP GOLDEN BROWN AND CRISPY, DRAIN ON A RACK OR PAPER TOWELS AND REPEAT WITH THE REST OF THE SHELLS.
  3. NOW YOU CAN ASSEMBLE...SPREAD SOME REFRIED BEANS ON SHELL, THEN SOME GREEN CHILES, THEN THE STEAK, THEN THE LETTUCE, THEN THE PICO DE GALLO, THEN THE CHEESE AND SOUR CREAM.
  4. DIG IN!!
