Lemon and Sesame Chicken

this is a recipe from a cookbook call Chicken... I love lemon chicken... and this is a quick and easy recipe
Ingredients
- 4 chicken breasts, boneless, skinless shopping list
- 1 egg white shopping list
- 2 TBSP. sesame seeds... i like the unhulled but hulled works fine shopping list
- 2 TBSP. vegetable oil shopping list
- 1 onion, sliced shopping list
- 1 TBSP. brown sugar shopping list
- 1 lemon, fine grate lemon peel and juice shopping list
- 3 TBSP. lemon curd shopping list
- 1 ( 7-ounce ) can sliced water chestnuts shopping list
How to make it
- place the chicken breasts between 2 sheets of plastic wrap and pound with a rolling pin to flatten
- slice the chicken into thin strips
- whisk egg white until light and foamy
- dip chicken strips into egg white
- then coat with sesame seeds
- heat oil in a wok and stir fry the onion for 2 minutes until softened
- add chicken and stir fry for 5 minutes or until the chicken is golden
- mix sugar, lemon peel, lemon juice and lemon curd
- add lemon mixture to wok and allow to bubble slightly
- add water chestnuts and cook 2 minutes...
- serve with rice
