Featherlight Cake

- 1 1/3 cup cake flour shopping list
- 2 1/2 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 2/3 cup superfine sugar shopping list
- 2/3 cup hot water shopping list
- 1/2 tbsp vanilla shopping list
- 2 tbsp grated lemon zest shopping list
- 3 egg whites, room temperature shopping list
How to make it
- Preheat oven to 350F.
- Sift flour with baking powder, salt, and half the sugar.
- Add boiling water slowly and whip until smooth with a hand mixer.
- Beat in vanilla and lemon zest.
- Beat egg whites until beginning to peak.
- Add remaining sugar to egg whites beat until thick, smooth and stiff.
- Fold gently into the batter.
- Pour into a lightly greased and sugared tube pan.
- Bake 25 - 30 minutes.
- Invert to cool completely.

Lawdy, I remember the hand mixer.This sounds fantastic. I am doing it on Monday for my friend's Birthday. She will love it cause it's low fat!
