How to make it

  • Preheat oven to 350F.
  • Sift flour with baking powder, salt, and half the sugar.
  • Add boiling water slowly and whip until smooth with a hand mixer.
  • Beat in vanilla and lemon zest.
  • Beat egg whites until beginning to peak.
  • Add remaining sugar to egg whites beat until thick, smooth and stiff.
  • Fold gently into the batter.
  • Pour into a lightly greased and sugared tube pan.
  • Bake 25 - 30 minutes.
  • Invert to cool completely.

    Oh yeah, I remember my grandmother and her hand mixer - it was the only way she ever whipped her cream...I'd hate to try it today (those were some strong women!). I'm sure your grandmother's recipe would produce a wonderful, light, delicious cake - I love those "old" recipes and methods, so I will have to give this one a try. Thanks!
