24 Karet Cake

The best carrot cake ever. It makes great wedding or special occasion cakes. Great with cream cheese icing. I got the recipe over 25 years ago from the gal who taught me cake decorating.
Ingredients
- 2 cups flour shopping list
- 2 teaspoons baking powder shopping list
- 1 1/2 teaspoons baking soda shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon cinnamon shopping list
- 2 cups sugar shopping list
- 1 1/2 cups oil (or can use 3/4 cup oil and 3/4 cup applesauce for a lighter cake) shopping list
- 4 whole eggs shopping list
- 2 cups grated carrots shopping list
- 8 ounces crushed pineapple in juice; undrained shopping list
- 1/2 cup chopped walnuts shopping list
How to make it
- Sift dry ingredients together into large bowl.
- Add sugar, oil and eggs, mix well.
- Add carrots, pineapple with juice and nuts.
- Bake in greased and floured 9x13" pan or bundt pan at 350* for about 45 minutes or until done.
- Cool on rack.
- Frost with Cream Cheese Frosting.
