Zucchini Jam

- 6 cups zucchini; grated shopping list
- 1/4 cup water shopping list
- 1 dash salt shopping list
- 1 package pectin shopping list
- 3 1/2 cups sugar shopping list
- 13 ounces crushed pineapple shopping list
- 6 ounces apricot gelatin powder shopping list
How to make it
- Heat zucchini, salt and water slowly in large kettle and cook until soft.
- Add pectin and bring to a hard boil.
- Add sugar and pineapple; bring back to boiling and boil 5 minutes.
- Remove from heat; add Jello & stir until well mixed.
- Ladle into sterilized jars and seal.
- Makes about 8 cups.
- NOTES : If you are using the giant zukes, remove the seeds before grating them.

what a GREAT idea. wish someone had shown this to my parents 30-odd years ago when they nearly KILLED me with zukes!
