Indian Samosa

- Pastry: shopping list
- 1c flour shopping list
- 2Tbs veg. oil shopping list
- Filling: shopping list
- 2 large potatoes,boiled shopping list
- 1 onion,chopped shopping list
- 2 green chilis,very finely chopped shopping list
- 3Tbs oil shopping list
- 1/2tsp ginger,grated shopping list
- 1/2tsp garlic,crushed shopping list
- coriander seed shopping list
- 1Tbs cilantro,finely chopped shopping list
- 1/2lemon,juice of shopping list
- 1/2tsp tumeric shopping list
- 1/2tsp garam masala shopping list
- 1/2tsp red chili powder shopping list
- salt shopping list
- Meat filling shopping list
- 1/2lb. ground meat(either lamb or beef) shopping list
- 1tsp cumin seed shopping list
- 2 whole cardamon pods shopping list
- 1 med oninon,cut in small dice shopping list
- 2Tbs oil shopping list
- 1 garlic clove,crushed shopping list
- 1-2 tsp ginger paste shopping list
- 1Tbs. curry powder shopping list
- salt and pepper to taste shopping list
How to make it
- Mix together the flour ,oil and salt
- Add a little water,until mixture becomes crumbly
- Keeo adding water,kneading the mixture till it becomes a soft pliable dough
- Cover with a moist cloth and set aside for 20 mins
- Beat dough on a work suface and knead again. Cover and set aside
- Filling:
- Heat 3 Tbs oil
- Add ginger,green chilis and a few coriander seeds
- Stir fry for 1 min.add onions and saute till light brown
- Add cilantro(fresh coriander),lemon juice,tumeric,red chili,salt and garam masala
- Stir fry for 2 mins.
- Add potatoes
- Stir fry for 2 mins
- Set aside,allow to cool
- Divide dough into 10 equal pieces
- Use rolling pin t,roll a piece of dough into 5" oval.
- Cut into 2 halves
- Roun a moist finger along the diameter
- Roll around finger to make a cone.
- Place a Tbs. of filling in the cone.
- Seal the third side using a moist finger
- Deep fry the samosas on low to med. heat till light brown.
- Serve with tomato sauce or any chutney you love.
- Meat filling:
- Brown the meat and set aside. Heat oil ina a skillet or fry pan and add cumin seeds and cardamom pods and cook 1 min. Add onions and coook until translucent. Reduce the heat and add garlic and ginger paste. Fry for 2-3 mins. Add curry powder and 3 cook 3 more mins. so that the flavors are incorporated. Season with salt and pepper to taste.
