Chicken Cacciatore Recipe
This is my version of the classic. I adapted it from a recipe that a chef friend gave me to make it easier to make at home.

Ingredients
  • 1/2 onion; chopped
  • 2 cloves garlic; crushed
  • 1/2 pound sliced fresh mushrooms
  • 1 tablespoon olive oil
  • 15 ounces canned tomatoes; diced
  • 1 cup red wine
  • 1 cup beef broth
  • 1/2 teaspoon basil
  • 1/4 teaspoon oregano
  • salt and pepper to taste
  • 1 whole chicken; cut up
  • 1/2 cup flour
  • 2 tablespoons olive oil; for frying

Directions
  1. Saute onion, garlic and mushrooms in 1 tablespoon olive oil until translucent.
  2. Add tomatoes, wine and broth and simmer and reduce 5 minutes.
  3. Add seasonings.
  4. Brown floured chicken pieces in 2 tablespoons olive oil until golden.
  5. Transfer to an ovenproof casserole dish, cover with sauce.
  6. Bake at 375ยบ for 30 minutes.
  7. NOTES : Serve with buttered pasta or rice.

I have a recipe similar to this, but I think I'll try this one because mine is too spicy!


I made this last night for dinner.It wasn't broiling hot for once,so I decided the oven was okay. Easy to make, well seasoned, family liked it. I used chicken thighs with the bones, basil from the garden but no oregano.I baked it for a longer time since I like chicken caciatore to be falling off the bones. Thank you for sharing whodonitrdr


A very good recipe. I made this tonight. Sorry I didn't take a picture. I made a few alterations but nothing that would drastically change the recipe. I used chicken breast instead of a whole chicken. Noone in my family likes the dark meat. I also floured the chicken pieces in wheat flour instead of white.. and lastly I used the beef broth instead of oil to saute the mushrooms,garlic and onions.
That said Hubby loved it says it is better than his mothers. I had never tasted anything like it before, but I liked it. Of course the kids were just ok with it.
Definately an easy and yummy recipe
