My family and I love cornbread and we find the addition of cranberries is a welcoming one. This is wonderful at any time of year but it's always on our table for Thanksgiving and Christmas.

Ingredients
  • 1/2 cup butter, softened
  • *my Mother would use melted and slightly cooled shortening
  • 3/4 cup brown sugar or 1 cup white sugar
  • 2 eggs
  • 1-1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • *I like to sift the flour, baking powder and salt.
  • 1 cup fine cornmeal
  • 1-1/2 cups buttermilk
  • 3/4 cup fresh cranberries, halved
  • *dried cranberries or fresh blueberries can also be used
  • Note: I recently made this and added a heaping handful of grated cheddar cheese. It was excellent!

Directions
  1. In a mixing bowl, cream butter and sugar.
  2. Add beaten eggs and mix well.
  3. Sift flour, baking powder and salt.
  4. Note: You don't have to sift but I do.
  5. Add cornmeal to dry mixture.
  6. Make a well in the center of the dry mixture and add the creamed mixture alternately with buttermilk.
  7. Do not stir this mixture vigorously but gently fold to blend all ingredients.
  8. Try to use as few folds as possible but make certain to blend all ingredients.
  9. Fold in cranberries.
  10. Transfer to a greased and lightly floured 9 inch square Pyrex baking pan or a Pyrex loaf dish.
  11. Bake at 375 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean.
  12. Serve warm with butter.
  13. This recipe will make 1 square cake or 1 loaf or 12 + muffins.

This recipe is almost identical to my Mother's recipe and I know first hand how good it is. I've been making it for years. A "5" fork recipe for sure!


Thanks for this! I recently read that the cranberry is the best fruit out there in terms of it's vitamins, nutrients, antioxidants, etc. So anyway I can use it, I'm there! And this sounds really good -- particularly for Thanksgiving and Christmas, but even for a barbeque or with beef stew! Very versatile actually! Thanks.


We've lived all over the US and no matter where we are, there's always a different recipe for corn bread. I really like the addition of cranberries, blueberries and cheddar cheese and I can't wait to bake it. Thanks so much.
