Honey Cornmeal Muffins

- 2/3 cup milk shopping list
- 1/3 cup butter or margarine, melted shopping list
- 1/2 cup honey shopping list
- 2 eggs shopping list
- 1 1/2 cups whole-wheat flour shopping list
- 2/3 cup cornmeal shopping list
- 2 1/2 teaspoons baking powder shopping list
- 1/4 teaspoon salt shopping list
How to make it
- In small bowl, beat together milk, butter, honey and eggs.
- Set aside. In large bowl, stir together dry ingredients.
- Add honey mixture.
- Stir just enough to barely moisten flour.
- Do no overmix.
- Spoon batter into paper-lined or greased muffin pan cups.
- Bake in preheated oven at 350 degrees for 20 to 25 minutes.
- Serve warm
