Wild Rice Carrot Soup Recipe

Ingredients
  • 1 can chicken broth
  • 2-1/2 cups sliced carrots
  • 1/2 cup chopped onion
  • 1 bay leaf
  • 1/8 teaspoon pepper
  • 1/8 teaspoon ground cloves
  • 1-1/2 cups water
  • 1/2 cup dairy sour cream
  • 1 cup cooked wild rice
  • 1 tablespoon snipped fresh parsley

Directions
  1. In large saucepan combine broth, carrots, onion, bay leaf, pepper and cloves.
  2. Bring to a boil then reduce heat and simmer covered for 20 minutes then remove bay leaf.
  3. In a blender container or food processor bowl place carrot mixture one half at a time.
  4. Cover and blend or process until smooth then return mixture to saucepan and stir in water.
  5. Bring just to boiling then stir a small amount of liquid into sour cream.
  6. Return to saucepan along with the rice and heat through but do not boil.
  7. Sprinkle with parsley.
