Ingredients

How to make it

  • Combine bread crumbs, parsley, parmesan, dash salt and pepper on a small plate
  • Carefully slice your chicken breasts in half, lengthwise, making 2 chicken-cutlet-sized, breast halves
  • Heat EVOO in skillet over medium high heat
  • moisten chicken in egg mixture on both sides
  • Entirely coat chicken with breadcrumb mixture
  • cook in skillet, approx 3 minutes a side, until no longer pink
  • Remove from heat & serve!!
  • So yummy with mashed potatoes and sauteed veggies!

    We do a very similar one but haven't tried it with Parmesan. That sounds like a great addition and I'll remember to try your recipe this week. Thanks for sharing!
