Parmesan Crusted Chicken Recipe

	easy quick skillet chicken

Ingredients

3 boneless skinless chicken breasts

plain breadcrumbs (enough to cover a small plate)

1 Tbs dried parsley

salt and pepper

approx 3 Tbs grated parmesan

1-2 eggs, beaten

EVOO

Directions

Combine bread crumbs, parsley, parmesan, dash salt and pepper on a small plate

Carefully slice your chicken breasts in half, lengthwise, making 2 chicken-cutlet-sized, breast halves

Heat EVOO in skillet over medium high heat

moisten chicken in egg mixture on both sides

Entirely coat chicken with breadcrumb mixture

cook in skillet, approx 3 minutes a side, until no longer pink

Remove from heat & serve!!

So yummy with mashed potatoes and sauteed veggies!
