Parmesan crusted chicken

- 3 boneless skinless chicken breasts shopping list
- plain breadcrumbs (enough to cover a small plate) shopping list
- 1 Tbs dried parsley shopping list
- salt and pepper shopping list
- approx 3 Tbs grated parmesan shopping list
- 1-2 eggs, beaten shopping list
- EVOO shopping list
How to make it
- Combine bread crumbs, parsley, parmesan, dash salt and pepper on a small plate
- Carefully slice your chicken breasts in half, lengthwise, making 2 chicken-cutlet-sized, breast halves
- Heat EVOO in skillet over medium high heat
- moisten chicken in egg mixture on both sides
- Entirely coat chicken with breadcrumb mixture
- cook in skillet, approx 3 minutes a side, until no longer pink
- Remove from heat & serve!!
- So yummy with mashed potatoes and sauteed veggies!
