How to make it

  • Boil potatoes until tender but not too soft.
  • Drain potatoes and set aside.
  • In large pot, saute onions and celery in butter until tender.
  • Stir in mushroom soup, broth, potatoes, and seasoning.
  • Bring to a boil.
  • Lower heat to medium and stir in cream cheese and Velveeta.
  • Stir well and add half and half.
  • Continue to cook over low heat until cheese melts, stirring often.
  • Stir in parsley flakes.
  • Ladle into soup bowl and top with green onions, croutons and shredded cheese.

    I LOVE potato soup in whatever combination. yours - hmmm - creamy, rich, definitely something wonderful for winter. I have made one just two days ago but never thought of putting the cheese in. great idea! as i do not use canned soups, etc. (allergies), I have used fresh mushrooms (Pfifferlinge, don't ask me of its english name, please) and cream. I shall definitely make the next potato soup yours - using fresh champignons instead of the canned soup. I am already looking forward to this event.

    Made this last night and everyone loved it!! The creole seasoning adds a great flavour to this creamy soup...I am going to try omitting the velveeta and making a seafood chowder out of this recipe...Thank you for sharing a wonderful soup!

    I just printed these ingredients. I am making this for tonight. I will let you know what I thought. I'm sure it'll be a hit,as it sounds and looks great. The only thing I am doing different is I'm adding Bcaon. thanks!!!
