How to make it

  • Prepare pasta until al dente and drain
  • meanwhile sautee tomatoes, zuchini, capers, and roasted red pepper in olive oil until zuchinni is tender (over low heat until pasta is done)
  • season with salt and pepper
  • stir in pasta and increase the heat slightly
  • sprinkle parsley
  • add margarine and dash of red pepper flakes if using
  • drizzle a little olive oil over the top and stir to mix all the flavors
  • season with extra salt and pepper to suit your taste
