How to make it

  • Preheat oven to 375F, and grease a 9" pan.
  • Melt chocolate and oil in a double boiler over low heat.
  • In a medium bowl, stir together flour, baking soda and salt. Set aside.
  • Beat together brown sugar, egg, sourdough starter and vanilla, then stir in cooled chocolate mixture.
  • Stir in flour mixture until just blended.
  • Spread in prepared pan.
  • Bake 30 - 35 minutes, or until edge begins to pull away from pan.
  • Cool completely before cutting and serving.

    It could be, the extra lift from the starter would make it poof a bit more. If you try it again, give it a shot with just the egg yolk and 1/4 cup of cocoa in place of 1/4 cup flour. It will make it a bit denser. I have a totally wheat free recipe too that is pure fudge, I think I've posted it here too.

    I tried this recipe and it did not not turn out fudge-y. It had a nice cake-y texture but a bit dry. Flavor was of bitter chocolate, not very sweet, a plus in my opinion. Used starter at 100% hydration, not sure what "unfed" means exactly. It was fed the day before but not before I used it in this recipe. Maybe my starter was too active?
