Roasted Beets And Roots Salad With Oranges

- 6 beets shopping list
- 6 carrots shopping list
- 6 parsnips shopping list
- 2 garlic bulbs shopping list
- 2 large red onions shopping list
- 4-5 spoons olive oil shopping list
- salt and pepper shopping list
- 2 tsp honey shopping list
- 2 tsp balsamic vinegar shopping list
- 3 oranges shopping list
- 1 tbsp diced mint shopping list
How to make it
- Peel and chop vegetables in small cubes. Set onions on the side. Mix the rest of the veggies with salt and pepper and olive oil. You can keep the garlic in peel and squeeze them out once they are roasted,or peel them ahead. Roast at 425F for 35 minutes. Add the peeled and cut onions and roast another 15 minutes. Mix all the rest in a bowl with the roasted vegetables and serve.
