How to make it

  • Peel and chop vegetables in small cubes. Set onions on the side. Mix the rest of the veggies with salt and pepper and olive oil. You can keep the garlic in peel and squeeze them out once they are roasted,or peel them ahead. Roast at 425F for 35 minutes. Add the peeled and cut onions and roast another 15 minutes. Mix all the rest in a bowl with the roasted vegetables and serve.

    I agree with Lor. And the dressing sounds wonderful. I love beet salads. I also like the root veggies in this recipe because they can end up having a similar texture to the beets... Nice recipe... High 5 Jim
