Moroccan Beef With Honey Spice Couscous Recipe
MOROCCAN BEEF WITH HONEY SPICE COUSCOUS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gardner Estate in Richardson, Texas in 1988. This is another tried and true delight sure to please.

Ingredients
  • 1-1/2 pounds beef flank steak
  • 2 tablespoons red wine vinegar
  • 2 teaspoons garlic salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground black pepper
  • 1/2 cup honey
  • 1/2 cup olive oil
  • Honey-Spice Couscous:
  • 2 cups water
  • 1/3 cup steak marinade
  • 1 can garbanzo beans
  • 1 cup fresh seeded and chopped tomatoes
  • 1/3 cup chopped fresh flat-leaf parsley
  • 12 ounce package couscous

Directions
  1. To prepare marinade combine vinegar and seasonings then stir well.
  2. Add honey and oil stirring until blended then remove 1/3 cup marinade.
  3. Place flank steak in plastic bag then add remaining marinade turning to coat.
  4. Close bag securely and marinate in refrigerator 1 hour or up to overnight.
  5. Preheat skillet over medium heat then remove steak from marinade and discard marinade.
  6. Place steak in skillet and cook 10 minutes then turn steak.
  7. Cover and reduce heat to low then cook 10 minutes.
  8. Slice steak into thin slices then serve with pan juices.
  9. In large saucepan combine water, reserved marinade, beans, tomatoes and parsley.
  10. Bring to a boil over high heat then stir in couscous.
  11. Cover and remove from heat and let stand 5 minutes then fluff with fork to serve.
