Ingredients

How to make it

  • Mix vegetables and cook for 3 hours.
  • (Tomatoes could be cut up smaller to reduce lumps.)
  • After 3 hours, add the tomato paste, sugar, canning salt, olive oil, and in a cloth bag, the basil and oregano.
  • Cook 2 more hours.
  • Fill hot sterilized jars, leaving 1/2 inch space from the top and process in hot water bath for 15 minutes.

This is a great tasting recipe! As a matter of fact I have a pot cooking on the stove right now, we are canning tonight. One thing though, do you cook it down with or without a lid?

Great recipe Lana I canned a lot of tomato sauce this year. I am glad to see others can too. I had so much to process I had to freeze some too.

There aren't nearly enough canning recipes out there in my opinion. I only just started to get into canning and cannot say that I've done much...only apple butter and brandied cherries...but I'm so happy to have found a good tomato sauce recipe. Thank you!
