Honey Crunch Pecan Pie

- 4 large eggs, lightly beaten shopping list
- 1 cup light corn syrup shopping list
- 1/4 cup sugar shopping list
- 1/4 cup firmly packed brown sugar shopping list
- 2 TBSP. butter, melted shopping list
- 1 TBSP. bourbon shopping list
- 1 teasp. vanilla shopping list
- 1/2 teasp. salt shopping list
- 1 cup chopped pecans shopping list
- ..................................................... shopping list
- 1 unbaked 10-inch pie crust shopping list
- ..................................................... shopping list
- 1/4 cup plus 3 TBSP. firmly packed brown sugar shopping list
- 1/4 cup butter shopping list
- 1/3 cup honey shopping list
- 2 cups pecan halves shopping list
How to make it
- preheat oven
- in a large bowl combine the first 8 ingredients
- stir well with a wire whisk until blended
- stir in the chopped pecans
- spoon the pecan mixture into the crust
- bake in a 350' F oven for 35 minutes.
- if edge of crust browns too quickly cover with a strip of aluminum foil

- while pie is baking ...in a medium saucepan ...combine 1/4 cup plus 3 TBSP. of brown sugar, 1/4 cup butter, and honey.
- cook mixture for 2 minutes over medium heat or until the sugar dissolves and the butter is melted...stir the mixture often
- add pecan halves and stir gently until all the pecans are coated.
- ...............................................................................
- spoon the pecan mixture evenly over the pie.
- bake 12 more minutes or until the topping is bubbly
- let cool completely on a wire rack
- yields about 8 servings...
