How to make it

  • Combine chocolate wafer crumbs, 1/4 cup sugar and melted butter.
  • Press onto bottom of 9 inch springform pan that has been sprayed with pan release spray.
  • Bake at 325 degrees for 8 minutes, remove from oven.
  • Melt chocolate and reserve.
  • Combine softened cream cheese and sugar in mixer, mix until smooth.
  • Add eggs, one at a time and mix just until blended (do not overbeat).
  • Add orange juice and rind and combine.
  • Reserve 1 1/4 cups batter, pour remainder into pan.
  • Mix melted chocolate into reserved batter, then swirl chocolate batter through batter in pan for a marbled effect.
  • Bake for 1 hour, then turn oven off and leave in oven for an additional 20 minutes.
  • Cool cheesecake in refrigerator for 6 hours or overnight before serving.
