Ingredients
  • 3 cups flour
  • 2 tsp salt
  • 3 eggs
  • 2 tbsp olive or vegetable oil
  • 1/4 cup cold water
  • cornstarch (for ease of handling)
  • 1/2 cup butter, cut into small pieces
  • pepper to taste

Directions
  1. Place the flour onto the counter, and form a 'bowl with your fingers.
  2. Add the eggs, water and oil gradually, mixing in as you go, until the entire 'bowl' of flour is incorporated.
  3. Let this dough rest about 10 minutes, covered with a damp towel.
  4. Then:
  5. Knead the dough 10 minutes, then let it rest one hour.
  6. Best to use a pasta hand-crank machine for lengthening and cutting, but if you don't have one, here's a good substitute method:
  7. Use a rolling pin to flatten to desired thinness.
  8. Cut it into long strips approx 1/8th inches wide. [Or, cut into whatever shape you prefer.]
  9. Allow to dry, or cook immediately.
  10. Footnote
  11. Tastes great with tomato sauce, meatballs, cheese, or butter topping.
  12. Note-- Yelling “Ayyy!” or singing “O Solo Mio” is not allowed.....! :

Oh very nice... I am gonna give this a go. I make a wonderful garlic mushroom alfredo sauce.. I cannot wait to give this a try! I do not have a pasta hand crank machine but i'm willing to give it a whirl!
