Sweet Ricotta And Oreo Parfait Recipe

Ingredients

~12-15 crushed oreo cookies

2 c. Ricotta Cheese

1 1/4 c, plus 2 TBSP, confectioners sugar, separated

1 tsp vanilla

1 c. semi sweet chocolate chips

1 pint heavy whipping cream

Directions

Crush Oreos and set aside

Add Ricotta, 1 1/4 c. confectioners sugar, vanilla, and choclate chips to mixer and combine well.

Remove mixture into bowl and place in fridge

Add pint of heavy cream to stand mixer

Mix on medium speed until soft peaks form, add 2 TBSP confectioners sugar, DON'T over mix!

Fold half of whipped cream into ricotta mixture

Take crushed oreos, ricotta mixture, and remaining whipped cream and layer into 4-6 individual parfait glasses

tip: add mixtures to large zip top bags, cut corner, and pipe into glasses
