Sauteed Chicken with Asparagus and Mushrooms

- 1Tbs olive oil shopping list
- 2lbs. boneless,skinless chicken thighs(about 6) cut into 2" pieces shopping list
- coarse salt and ground pepper shopping list
- 1lb. button mushrooms,trimmed and thinly sliced shopping list
- 2lbs. asparagus,tough ends removed,cut in 2" lengths shopping list
How to make it
- In large skillet,heat oil over med-high.Season chicken with salt and pepper. Cook in 2 batches,turning occasionally,until browned and opaque throughout,6-8 mins;transfer to plate.
- To skillet,add mushrooms,asparagus and 1/4c water;season with salt and pepper. Cook,tossing once and scaping up browned bits,until vegetables are crisp-tender,4-6 mins. Add chicken;cook,tossing,until warmed through,about 2 mins.

Wow, I was expecting a lot more work! Can't wait to try it. But knowing your recipes Pleclare, I KNOW it's a five! And anything with chicken, mushrooms and asparagus makes me a big fan!

I did this a few hours ago. I wanted something quick and with just a few ingredients available. I added a little more water and cornstarch to give it some sauce. Loved it! Thanks Pleclare :0)
